Course Description

Students will be encouraged to design their own curriculum based on their interests and needs to go into further education. A large selection of Level 3 Unit Standards are provided for the students to select their own curriculum from.  Student at Level 3 MUST produce and cater food in an authentic environment for a variety of customers and in a variety of situations. For this reason, the Level 2 and 3 students are an integral part of the Papakura High School Catering business called 'Educaterer's'. Hospitality students at Papakura High School have a well equipped, purposely built and fully functioning catering kitchen for this purpose.


Course Overview

Term 1
Food safety and culinary with at least 2 catering events serving between 200 and 300 people. Smaller events may be commissioned depending on the unit standards the students are completing.

Term 2
Culinary with a finger food catering function serving between 200 and 300 people. A numbers of smaller catering event may be commissioned depending on the unit standards the students are completing for this term.

Term 3
Barista work. origins, of coffee, making of different espresso coffees and customer service. This term will also include at least one large catering event.

Term 4
Barista and culinary continues. The last few weeks of term is a completion term to ensure students have every opportunity to complete any incomplete standards. At least one large catering event is commissioned, plus smaller ones if required to complete various unit standards.

Recommended Prior Learning

US167 Food safety or committed to achieving it with L2. Committed to be available to attend out of school time assessments at the ‘Educaterers’ catering functions.
